Lazy sandwich June 25, 2015 Jun 25 2015 Who loves doing dishes? Ah the remnants of food floating around in the sink, the tough grease stains sticking to the pots, the clatter of the well-balanced plate tower coming to a crash. Delightful. It may come as a surprise, but no matter how much nutritionists like making food from scratch, no one enjoys the process of cleaning up afterwards. (Unless you’re an OCD Monica from Friends type of person who squeals in delight at the opportunity to clean. If you are, please call me to arrange something?) So in the spirit of laziness, I wanted to share a good sandwich combo I happened upon when throwing together whatever was in my fridge. Feel free to make this on a paper towel sheet, that’ll show those dishes. Lazy Sandwich: (Serves: 1) Ingredients: 2 toasted slices of organic, sprouted whole grain bread (I use Silver Hills gluten-free chia bread) Dollop of hummus, any style Small handful arugula Small handful alfalfa sprouts 1/2 avocado, sliced 1/4 cup sautéed mushrooms Sea salt, chill flakes & lime to taste Instructions: Toast both slices of bread Layer hummus, sprouts, arugula & avocado in that order onto toast Lightly sauté mushrooms in oil of choice (I used olive oil) Place mushrooms on top of veggie tower Sprinkle with sea salt, chill flakes and a squeeze of lime Devour About Alina I'm a Holistic Nutritionist based in Toronto, Canada and my official title is Certified Nutritional Practitioner (CNP).
